Brown Butter Sage Roasted Carrots Recipe

Ingredients:

  • 1 ½ pounds of carrots, peeled and cut into 2-inch sticks (or use heirloom carrots for a colorful variation)

  • 4 tablespoons unsalted butter

  • 10 fresh sage leaves, chopped

  • 1 tablespoon olive oil

  • Salt and freshly ground black pepper to taste

  • 1 tablespoon honey or maple syrup (optional for added sweetness)

  • Fresh parsley for garnish (optional)


Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

  2. Prep the Carrots: Peel and slice the carrots into uniform sticks, about 2 inches long, to ensure even roasting.

  3. Brown the Butter: In a small saucepan, melt the butter over medium heat. Swirl the pan occasionally until the butter turns golden brown and releases a nutty aroma (around 5 minutes). Be careful not to burn it! Once browned, remove from heat and stir in the chopped sage. The heat will crisp the sage and infuse the butter with a rich flavor.

  4. Toss the Carrots: In a large bowl, toss the carrot sticks with olive oil, salt, and pepper. Optional additions: honey or maple syrup for sweetness. Drizzle the brown butter sage mixture over the carrots and toss until evenly coated.

  5. Roast the Carrots: Spread the carrots in a single layer on the prepared baking sheet. Roast for 20-25 minutes, stirring halfway through, until the carrots are tender and caramelized around the edges.

  6. Garnish and Serve: Transfer the roasted carrots to a serving platter, garnish with fresh parsley, and enjoy your nutrient-packed, delicious side dish!
