2–3 lbs of high-quality bones (beef, chicken, or turkey — organic or pasture-raised preferred)
1 medium onion, quartered
2–3 carrots, chopped
2 celery stalks, chopped
2–3 garlic cloves, smashed
2 tbsp apple cider vinegar (helps extract minerals from the bones)
1 tsp sea salt
1 tsp black peppercorns
1–2 bay leaves
Fresh herbs (thyme, rosemary, or parsley — optional)
Enough filtered water to cover everything (about 10–12 cups)

Slow Cooker Method:

Cover with water, leaving a little room at the top.
Cook on low for 18–24 hours (the longer, the better).
